Serves 8-10 people
INGREDIENTS
MEAT SAUCE:
1 onion diced
6 cloves garlic minced
4 large carrot peeled/grated *optional*
3lbs ground beef
2 24oz jars of spaghetti sauce of your choice
1 14oz can tomato sauce
2 tablespoons avocado oil
NOODLES
1.5 cups all purpose flour
2 eggs
Pinch of salt
1 tablespoon avocado oil
BÉCHAMEL SAUCE
3/4 cup butter
3/4 cup flour
6 cups milk
Salt to taste
1 tablespoon garlic powder
2 tablespoons parsley
Dash of black pepper
HOW TO MAKE MEAT SAUCE:
In a stock pot over medium high heat, cook onions and avocado oil until soft and tender. Add Pinch of salt. Add carrot, cook for 2 minutes. Pinch of salt. Add garlic. Add ground beef. Pinch of salt & pepper. Cook over medium high heat until completely browned. Add sauces. Stir and set aside.
HOW TO MAKE NOODLES:
Dump flour onto kitchen surface and make a well in the middle. Crack two eggs in the middle and add a pinch of salt. Begin to scramble the eggs in the middle, incorporating a little bit of the flour at a time. Once the flour is half way mixed with the egg, add a tablespoon of avocado oil or olive oil. Mix by hand and knead 3-5 minutes. Wrap in plastic or cover with bowl/towel and let rest on the counter for 20 minutes.
HOW TO MAKE BÉCHAMEL SAUCE:
In a sauce, pan over medium, high heat, add butter until melted and bubbling, then whisk in the flour. Continually stir as the butter mixture, Browns, and bubbles about 3 to 4 minutes. When the butter and flour smell like toast, it’s ready for the milk. Poor in the milk and whisk over high heat and bring to a boil while constantly stirring.
Once the mixture comes to a boil turn the heat down to low and add salt, parsley, garlic powder, and pepper.
HOW TO ASSEMBLE LASAGNA:
In a pan of choice, ladle the meat sauce on the bottom just enough to cover.Unwrap your noodle dough and cut into four equal parts. Lightly dust your kitchen surface and roll out thinly in the shape of your pan. Place the first noodle over the meat sauce.Add a layer of béchamel, then a layer of meat sauce, then roll out another noodle, and lay that on top.
Continue layering until all 4 noodles are used, ending with the meat sauce on top. Cover pan with a lid or aluminum foil and place in the oven at 450° for 45 minutes.
Cook uncovered 15 min.
Remove and let rest. Enjoy!
