Serves 8-10 people
3lbs ground beef
2 tablespoons fat of choice (I used ghee)
1 medium onion diced
2 large carrots peeled/shredded
1 tablespoon garlic powder
2 tablespoons ground turmeric
1/3 cup maple syrup
6 large potatoes
1/2 cup butter
1.5 cups sour cream
Salt to taste
HOW TO MAKE MASH:
Peel, chop and boil potatoes until fork tender. Drain. Add salt and butter. Mash until butter is melted. Add sour cream and mash until smooth texture. (We like ours with lumps, but feel free to whip with beaters for no lumps)
HOW TO MAKE SWEET BEEF:
In a pan over med-high heat, sauté onion until tender. Add carrot. Cook until soft about 5 min. Add ground beef and season with salt, pepper and garlic powder.
Cook until meat is brown. Add turmeric and maple syrup.
Serve over mash and garnish with parsley.
